Chipotle Butter Roast Turkey Crown

Ingredients
  

  • 1 Turkey breast crown
  • 1 tbsp Salt
  • 1 stick Room temperature salted butter
  • 2 Chipotle peppers finely minced
  • ½ tsp Oregano
  • 1 Lime zest
  • 1 Orange zest and juice
  • 2 Garlic cloves grated

Instructions
 

  • The day before you would like to cook your turkey, take 1 Tbsp of salt and rub all over the turkey. Place the turkey in the fridge overnight, uncovered.
  • To make the chipotle butter, mix the rest of the ingredients together well. Cover and leave at room temperature until needed.
  • When ready to roast your turkey, take it out of the fridge and set your oven to 375F. Place your turkey crown on a roasting tray. Now, take your butter and rub it underneath the skin of the turkey and on top of your turkey skin as well. Place your turkey in the oven. Roast for 30 minutes and then turn the heat down to 325F.
  • Cook until the thickest part of the breast is 161F, basting your turkey with the melted butter in the tray every 30 minutes. When done, rest your turkey for at least 30 minutes before carving. Carve and serve immediately with sides of your choosing.
