Ingredients
  

  • 4 multigrain sandwich rounds
  • 2 breakfast turkey sausage, small dice
  • ¼ cup  chopped fresh spinach
  • 8 large egg whites
  • 4 large egg whites
  • cooking spray

Instructions
 

  • Preheat oven to 350 degrees F.
  • In a medium bowl, combine the turkey sausage, spinach, and egg whites. Mix well.
  • Spray a muffin top pan with cooking spray and spoon the mixture into four of the cups.
  • Bake for 15 minutes or until the tops bounce back when touched.
  • Remove the egg from the pan, place on the bottom of a sandwich round and top with one slice of cheddar cheese.

Notes

Once you make these sandwiches, wrap them tightly in foil then place in the freezer until you're ready to eat. Let defrost naturally in the refrigerator the night before or you can place them in the oven or toaster oven. If you want to reheat in the microwave, remove the foil and wrap the sandwich in a paper towel before heating. If you don't have a muffin top pan, you can use a regular muffin/cupcake tin instead; however, increase the cooking time by 5-10 minutes.
