QUICK TURKEY NOODLE SOUP

Ingredients
  

  • 1 tbsp butter
  • ½ cup chopped onion
  • 1 clove garlic, minced
  • ¼ chopped fresh parsley
  • 2 cups chopped cooked turkey
  • 2 cups frozen mixed vegetables, thawed
  • 9 cups  chicken broth
  • ½ tsp  poultry seasoning
  • ½ tsp dried thyme
  • ½ tsp  salt
  • tsp pepper
  • 2 cups uncooked egg noodles

Instructions
 

  • In a large saucepan or Dutch oven, melt butter over medium heat.  Add onion and garlic; saute until softened, about 5 minutes.  Add parsley; saute about 30 seconds.
  • Add turkey, mixed vegetables, chicken broth, poultry seasoning, dried thyme, salt, and pepper; stir to combine.
  • Increase heat and bring to a boil.
  • Stir in egg noodles; return to a boil.
  • Reduce heat to medium.  Simmer 15 minutes, stirring occasionally, until noodles are cooked and tender.
  • Season with additional salt and pepper, to taste.
