QUICK TURKEY NOODLE SOUP
Ingredients
- 1 tbsp butter
- ½ cup chopped onion
- 1 clove garlic, minced
- ¼ chopped fresh parsley
- 2 cups chopped cooked turkey
- 2 cups frozen mixed vegetables, thawed
- 9 cups chicken broth
- ½ tsp poultry seasoning
- ½ tsp dried thyme
- ½ tsp salt
- ⅛ tsp pepper
- 2 cups uncooked egg noodles
Instructions
- In a large saucepan or Dutch oven, melt butter over medium heat. Add onion and garlic; saute until softened, about 5 minutes. Add parsley; saute about 30 seconds.
- Add turkey, mixed vegetables, chicken broth, poultry seasoning, dried thyme, salt, and pepper; stir to combine.
- Increase heat and bring to a boil.
- Stir in egg noodles; return to a boil.
- Reduce heat to medium. Simmer 15 minutes, stirring occasionally, until noodles are cooked and tender.
- Season with additional salt and pepper, to taste.
