Herb and Cranberry Stuffed Turkey Breasts
Ingredients
- 4 boneless, skin-on turkey breasts
- 1 cup fresh cranberries
- 1 cup breadcrumbs
- 2 tbsp butter melted
- 2 garlic cloves minced
- 1 tbsp fresh rosemary chopped
- 1 tbsp fresh thyme chopped
- 1 tsp orange zest
- ½ tsp salt
- ½ tsp black pepper
- olive oil for searing
Instructions
Prepare the Stuffing:
- In a bowl, mix the cranberries, breadcrumbs, melted butter, garlic, rosemary, thyme, orange zest, salt, and pepper. Set aside.
Stuff the Turkey Breasts:
- Carefully loosen the skin of each turkey breast to create a pocket. Spoon the stuffing mixture evenly under the skin, pressing gently to distribute it.
Sear the Turkey:
- Heat olive oil in a skillet over medium-high heat. Sear the turkey breasts, skin-side down, until golden brown (about 3-4 minutes).
Roast the Turkey:
- Preheat the oven to 375°F (190°C). Transfer the seared turkey breasts to a baking dish, skin-side up. Roast for 25-30 minutes, or until the internal temperature reaches 165°F (74°C).
Rest and Serve:
- Allow the turkey to rest for 5 minutes before slicing. Serve with seasonal sides like roasted vegetables and cranberry sauce.
