Herb and Cranberry Stuffed Turkey Breasts

Ingredients
  

  • 4 boneless, skin-on turkey breasts
  • 1 cup fresh cranberries
  • 1 cup breadcrumbs
  • 2 tbsp butter melted
  • 2 garlic cloves minced
  • 1 tbsp fresh rosemary chopped
  • 1 tbsp fresh thyme chopped
  • 1 tsp orange zest
  • ½ tsp salt
  • ½ tsp black pepper
  • olive oil for searing

Instructions
 

Prepare the Stuffing:

  • In a bowl, mix the cranberries, breadcrumbs, melted butter, garlic, rosemary, thyme, orange zest, salt, and pepper. Set aside.

Stuff the Turkey Breasts:

  • Carefully loosen the skin of each turkey breast to create a pocket. Spoon the stuffing mixture evenly under the skin, pressing gently to distribute it.

Sear the Turkey:

  • Heat olive oil in a skillet over medium-high heat. Sear the turkey breasts, skin-side down, until golden brown (about 3-4 minutes).

Roast the Turkey:

  • Preheat the oven to 375°F (190°C). Transfer the seared turkey breasts to a baking dish, skin-side up. Roast for 25-30 minutes, or until the internal temperature reaches 165°F (74°C).

Rest and Serve:

  • Allow the turkey to rest for 5 minutes before slicing. Serve with seasonal sides like roasted vegetables and cranberry sauce.
