In a large saucepan or Dutch oven, melt butter over medium heat. Add onion and garlic; saute until softened, about 5 minutes. Add parsley; saute about 30 seconds.
Add turkey, mixed vegetables, chicken broth, poultry seasoning, dried thyme, salt, and pepper; stir to combine.
Increase heat and bring to a boil.
Stir in egg noodles; return to a boil.
Reduce heat to medium. Simmer 15 minutes, stirring occasionally, until noodles are cooked and tender.
